What applies to both shops

We bake at night, by hand, with a long slow prove, and put the results out in the shops during the day.

We work only with spelt varieties that have never been crossed. A voluntary quality check confirms at regular intervals that the grain is pure spelt and free of contamination. The electricity for the mill and the bakehouse we generate ourselves, from our own water power.

Since 2022 there has been a museum in Geisingen as well — on the history of the mill, on spelt at each stage of processing, and on Hildegard von Bingen. It is open during shop hours and by appointment until the end of October. More about the museum.

If you are not nearby, order from the shop: we ship with GLS, to Germany and to eighteen other European countries.
