Hildegard von Bingen speaks of “the best of grains”

Spelt is the best of grains; it is warm and fatty and strong, and it is milder than all other grains. It provides the person who eats it with good flesh and good blood, and it makes the human mind happy and full of joy. And however it is eaten – be it in bread or in other dishes – it is good and mild.

A holistic view

The Hildegard way of life looks at the person as a whole. Four areas belong together – on the plate and beyond it:

  • Food

    At its heart is spelt – “good and mild”, as Hildegard describes it, whether in bread or in other dishes.

  • Thoughts and feelings

    The mind belongs to it too: Hildegard credits spelt with making the mind “happy and full of joy”.

  • Dealing with stress

    How we deal with stress is part of this way of life too – not just what comes to the table.

  • Exercise

    Taking time to move is, for us, as much a part of this way of life as the meal itself.

Our specialisation

With good reason, we are turning once more to this ancient grain, which holds a special place in the Hildegard tradition. Through our work with Dr. Hertzka and Dr. Strehlow, we have specialised entirely, with our products, in cooking in the tradition of Hildegard von Bingen. With herbs and spices from this tradition we enrich the menu – and are happy to share tips and ideas for the modern kitchen.
