Tradition (Hildegard's writings)

A traditional everyday drink of Hildegard's cuisine — a wholesome, stomach-friendly alternative to bean coffee.

Ingredients

Roasted spelt coffee grains, ground spelt coffee and water.

Preparation

On the first day, boil 6 to 8 tbsp of spelt coffee grains and 1 tbsp of ground spelt coffee in 1 litre of water for 10 minutes and strain; the coffee is still thin at this stage, and the grains are kept cool. On the second and third day, boil the previous day's grains again for 10 minutes with 2 to 3 tbsp of fresh grains and 1 tbsp of ground coffee — the brew grows darker. From the fourth to the sixth day it is replenished with fresh grains again and again, until the first grains burst open; then you begin afresh. For a spelt cappuccino, grind roasted grains to a powder, boil 5 tbsp of it with 1 litre of water and finish with cream and chocolate powder.

Note

Contains neither acid nor caffeine and therefore does not disturb sleep — unlike bean coffee.
