Tradition (Hildegard's writings)

In Hildegard's tradition, cornelian cherry jam was associated with a sensitive stomach.

Ingredients

Cornelian cherries and jam sugar.

Preparation

Juice 1 kg of cornelian cherries, or cook them in 2 cups of water and pass them through a sieve. Boil the fruit pulp with an equal weight of jam sugar into a jam and pour it into sterile jars.

Botanical background

The bright red, sweet-sour fruits of the cornelian cherry (Cornus) are astringent; they are credited with caring properties for the irritated mucous membranes of throat, oesophagus and stomach. They contain anthocyanins and vitamin C.
