Tradition (Hildegard's writings)

In Hildegard's tradition, wine vinegar counted as a valuable addition to food and was associated with digestion.

Ingredients

Wine vinegar; fruit vinegars, for example from quinces or apples, are likewise mentioned.

Note

Undiluted vinegar attacks the enamel of the teeth and irritates the mucous membranes — always dilute it.

Background

Hildegard describes wine vinegar as suitable for all foods, provided it is used sparingly.
