Semolina Dumpling Soup
Ingredients
| 150 | ml | milk |
| 15 | g | butter |
| ¼ | tsp | salt |
| 1 | pinch | of nutmeg |
| 50 | g | Spelt Semolina |
| 1 | egg, beaten | |
| 1 | l | broth (e.g., made with "Hildegard-Delikatess-Suppe") |
| Chives for garnish |
Instructions
- Prepare the dough: Bring the milk to a boil with the butter, salt, and nutmeg. Stir in the spelt semolina and continue stirring until a thick, smooth dough forms that pulls away from the bottom of the pot.
- Incorporate the egg: Let the dough cool slightly, then thoroughly mix in the beaten egg until the mass is well combined.
- Shape and cook: Using two spoons, shape the semolina mixture into small dumplings (Nockerl) and drop them directly into the boiling broth. Reduce the heat and let them simmer gently for about 5 minutes.
- Serve: Garnish the hot soup with freshly chopped chives and serve immediately.
