Tradition (Hildegard's writings)

In Hildegard's tradition, the fennel drink (“heart juice”) was associated with the heart.

Ingredients

Fennel seeds, liquorice powder, sugar, honey and water.

Preparation

Mix 100 g fennel seeds, 20 g liquorice powder, 20 g cane sugar and 60 g honey with 500 ml of water, boil for five minutes and bottle sterile. For a full course, make up six times the amount (about 3 litres).
