Tradition (Hildegard's writings)

In Hildegard's tradition, almond kernels were associated with general well-being.

Ingredients

Kernels of the almond tree (Prunus dulcis).

Preparation 1

The kernels are eaten raw.

Note

Bitter almonds are not fit to eat because of the hydrocyanic acid they contain — only sweet almonds are used.

Botanical background

Almond kernels contain abundant unsaturated fatty acids, vitamin E and magnesium.
