Preparation
- Cook: Bring the milk and a pinch of salt to a boil. Stir in the spelt groats and let the mixture simmer gently for about 10 minutes.
- Swell: Remove the pot from the heat and allow the groats to swell and thicken for another 15 minutes.
- Refine: Melt the butter in a small pan. Pour the hot butter over the cooked groats and sprinkle generously with sugar and cinnamon.
- Serve: Serve the warm spelt groats immediately, accompanied by fresh apple or quince compote.
