Preparation
An excellent accompaniment to steamed vegetables.
- Toast & Chop: Lightly toast the sunflower seeds in a dry pan, stirring constantly. Let them cool in a bowl, then chop them coarsely.
- Cream the base: Cream the butter until frothy, then stir in the egg.
- Combine: Mix the spelt flakes, chopped sunflower seeds, and spices into the butter-egg mixture.
- Cook: Using two teaspoons, shape the mixture into small dumplings and drop them into the boiling vegetable broth. Let them simmer/steep for 10 minutes.
- Serve: Serve the dumplings (with some broth if desired) over your cooked vegetables. This dish pairs beautifully with toasted buttered bread.
